Put the composition in a large bowl and then mix the egg whites until you get a hard foam. Then add them to the dough, little by little, mixing with a spatula, from bottom to top, until well incorporated.

Divide the composition in two and turn it into two baking tins with a diameter of 24 cm. Put the tops in the oven and leave them for 30-40 minutes. Check with a toothpick if they are ripe. Then remove the molds and let the countertops cool on a wire rack.

For the cream, mix the butter at room temperature with the cream cheese until soft. Then add the powdered sugar, liquid cream and vanilla and mix for another 2 minutes. Now assemble the cake: straighten the cake tops with a sharp knife. Put a countertop on the plate, pour half the cream, put the second countertop and then the rest of the cream.

Level well and coat the sides of the cake. Crush the remaining top and decorate the cake, then let it cool for 2-3 hours.

Distribute the composition in 3 trays of 20 cm in diameter and level with a spatula. Bake in the oven at 180 ℃ for 22-28 minutes. The countertops are left to cool overnight, preferably.

For the cream, mix 500g mascarpone at room temperature with 300ml sweet cream for whipping cream until it hardens.
