This is a classic Black Forest cake recipe that never really goes out of style. Perfect for birthdays or special occasions.

- 250g plain flour
- 350g caster sugar
- 1 teaspoon baking powder
- 3/4 teaspoon bicarbonate of soda
- 1/4 teaspoon salt
- 320ml water
- 110g butter or margarine
- 2 1/2 teaspoons vanilla extract
- 2 eggs
- 85g cooking chocolate, melted
- 75g butter
- 500g icing sugar, sifted
- 4 tablespoons milk
- 50g unsweetened cocoa powder
- 1 (425g) tin black cherries, drained with juice reserved
- 1 tablespoon cornflour
- 6 teaspoons orange liqueur

- Preheat oven to 180 C / Gas 4. Grease and flour two 20 or 23cm round cake tins.
- In a medium sized bowl combine flour, caster sugar, baking powder, bicarbonate of soda and salt. Add water, margarine and 1 teaspoon vanilla. Beat with an electric mixer on low to medium speed until combined. Then beat on high speed for 2 minutes. Add eggs and melted chocolate and beat 2 minutes more. Pour batter into prepared tins.
- Bake for 30 to 35 minutes. Cool cakes on a wire rack for 10 minutes. Remove cakes from tins and let cool thoroughly on a wire rack.
- To Make Icing: Beat butter until fluffy. Gradually add half of icing sugar and the cocoa. Beat well than add the milk and 1 1/2 teaspoons vanilla extract. Beat in the remaining icing sugar and any additional milk as needed for spreadability.
- To Make Filling: Drain cherries reserving 160ml of the liquid. In a medium saucepan combine reserved liquid and cornflour, add fruit. Cook over medium heat and stir until thickened and bubbly. Cook and stir for more 2 minutes and then stir in the orange or cherry liqueur. Remove from heat cover and cool without stirring.
- Arrange one cake layer on a serving dish and spread the cooled cherry filling over the top (reserve some cherries for a garnish for top of cake). Place second layer on top filling and ice sides and top of cake with icing.

Gave this a go this morning and it was a total disaster, i followed the recipe exactly and the cakes just didnt cook. even after an hour in the oven, very disappointed as was intended as a surprise birthday cake.-03 Feb 2012
I was expecting it to be much better. It was not worth all the work. Everyone enjoyed it enyway and it was very pretty. I decorated the cake with the cherries, whipped cream, and chocolate shavings.-30 Oct 2000
