Prepare the beans the night before. Choose from impurities, wash well, then boil with enough water to exceed it. Bring to a boil, then drain through a sieve.

Put the beans on the fire again with hot water, an amount of water double the amount of beans. Bring to a boil, turn off the heat, cover and leave until the next day.

The next day we drain the water, rinse the beans, then put it on the fire together with the whole vegetables, cleaned and washed, thyme and a little salt. Let it boil until it softens enough and the grain breaks on its own. Drain the juice into a bowl. We clean the 2 onions, wash them and cut them into juliennes. We harden them together with the oil and a little salt. We drip a tablespoon of water from time to time. When the onion has softened enough, add the sweet paprika and leave a little more. We make sure that when we put the paper there is a little water. When the water has dropped, turn off so as not to fry the paprika.

Mix the beans together with all the vegetables, add the crushed garlic, then pour the oil from the hardened onion in a thin line, mixing in one like mayonnaise until you incorporate all the oil. If necessary, add salt. Put in a bowl, garnish with the remaining hardened onions and let cool.

Steps

The white beans are left in cold water in the evening. Bring to the boil and remove the foam as many times as it forms. Drain twice and each time add hot water to the boil. In the last water we can put a little salt. Drain and leave to cool. Do not throw away all the juice, keep a can, you may need it.
Chop onions and peppers.

The boiled beans are put in the robot bowl with oil and a little salt. We will have a creamy and tasty pasta. If it is too hard, add a little juice from which the beans boiled.
Grind the garlic and, if you prefer, more garlic or not, add it to the paste, mix and potion.

Heat the oil in a pan and fry the onions and peppers, sprinkle with salt and pour a little tomato juice. I don't add pepper anymore because we have hot peppers, but a sprig of thyme will give a pleasant aroma.
Put this sauce in each plate over the beaten beans and serve on slices of bread.

How to prepare beaten beans with garlic?

Put the beans to boil in a pot, without adding any other ingredients, so that they are completely covered by water. When it boils first, pour water and replace it with another, preheated. It is advisable to repeat this procedure at least twice. When you change the water for the last time, you can add salt, bay leaf and half a teaspoon of baking soda. All the steps followed so far have the role of removing substances that can cause gastric and intestinal discomfort.

In this last phase, the beans must be boiled for at least 40 minutes, until you notice that they are soft enough. Meanwhile, finely chop the three onions and put two of them in a frying pan with hot oil, until they change color and become glassy. Add the two diced tomatoes and tomato paste and stir over low heat until the composition is homogeneous. Season the resulting sauce with salt, pepper and paprika to taste.

When the beans are cooked, drain the water, keeping a cup of it. Put the beans in a blender or food processor and pass them until they turn into a paste. If you notice that the beaten beans are too thick, you can thin them with some of the amount of water in which they boiled. Pour the composition into a bowl and add the crushed garlic, finely chopped onion and season to taste.

Mix well and add on top the previously prepared sauce from onions and tomato paste. You can serve this hot or cold food, along with a portion of pickles, for extra flavor. It can also be consumed as a stand-alone preparation or as a garnish for other fasting dishes, such as soybeans.

BEANS BEATEN WITH CARAMELIZED ONIONS

I am convinced that when you boil a large pot of beans for the soup, add a little more grain to enjoy another dish in this category, be it stew or beaten beans.

Beans beaten with caramelized onions is a filling snack that is very easy to prepare, a variant of the fasting recipe with a special taste that delights me every time I prepare it.

Ingredient:

  • 500 gr. beans
  • 1 large onion
  • 5 cloves of garlic
  • 1 tablespoon tomato paste
  • ½ teaspoon brown sugar
  • ½ teaspoon balsamic vinegar
  • salt and pepper to taste

Put a little olive oil in a pan where I cook for 2-3 minutes a piece of chopped onion.

I add the beans that I let boil a few times with a soup polish over it, then I season it, I add the garlic cut into thin slices and I leave it on the fire for about 2-3 minutes.

As long as my beans with the delicious garlic flavor are infused under the lid, I have time to prepare the caramelized onion.

Cut the onion into fairly large slices and put it on low heat over a little coriander-flavored sunflower oil.

Mix always for almost 10 minutes while it will soften and become quite glassy.

Sprinkle the brown sugar, let it caramelize the onion a little, then add a drop of balsamic vinegar.

I homogenize and add the tomato paste dissolved with a little water.

I realize it's ready after just a few minutes when I got a consistent sauce full of very fragrant caramelized onions.

Sprinkle a little more salt and stop the fire.

I pass the cooled beans very well, I refresh it with a spoonful of olive oil and I place it impatiently on a plate covered with a thick layer of caramelized onions.
